People's Choice Chili Recipe or 5 meat chili
I've been the worst Grand son ever. My grandpafer has been asking for this recipe for so long. This due to All of my trips, my tech breaking down, and me just forgetfully not posting. Here is the recipe.
Ingredients for a single big batch, not our usual three to five gallon batch. This is also the easy method.
Skillet
Large Pot
BBQ-my fave method
Beans with juice
Pinto 1
Black 1
Red Kidney 1
Chili 2
Veggies
Onions Red and Sweet yellow 1 and 1half coarse and half fine, to be cooked with the meats.
Garlic 2 clove crushed and reserved for the meat cooking
Jalapeno 1 finely chopped
Bell Pepper 2 coarse chopped
Anaheim Pepper 2 coarse chopped
Can of stewed tomatoes with juice
can of diced tomato and peppers with juice
Sausage links
Sage 2
Hot 2
Andoulle 1
Meat
Ground Round .5lb
Ground Chicken .5lb
Spices
Chili Powder
Cumin
Garlic Powder
Black pepper
Cayenne Pepper
Small amount of ginger and masala
In a large skillet or wok, add sausages, and turn on low, the sausages will slow cook, don't poke them just turn them . When we make them on the grill we do it on the top rack and let them slow cook so the juices don't leave the skin. The bbq is the preferred way to make them.
Once the sausages are finished set them aside,
Add the ground chicken, garlic, onion, ground beef to the skillet. Cook on low almost sweating the onion and meat.
This won't take long to slightly brown the meat, leave the ground a little pink as it will cook fully in the simmering process.
Drain the fat and reserve all the meat and veg left in the pot.
Chop the sausages coarsely and place them in the large stock pot.
Add the meat
add all the cans of veggies, and the coarse chopped peppers
Turn the lot of it on low
To the mix you'll add
2 to 5 tablespoons of cumin
.25 cup of chili powder
2 tsp cayenne
.5tsp ginger and masala
1 tablespoon black pepper
1 tablespoon garlic
Simmer this for an hour, if still watery add the potato flakes a half cup at a time. Add more spices to taste., NO SALT, there is plenty of salt in the sausages.
I know this isn't a standard recipe, we never had a standard format for making it. We would cook everything and throw it all together. Cumin and chili powder were our main ingredient
This is where we would just taste and add per our need, if the chili needs to be thickened we would use potato flakes not flour. The flakes leave no flavor but add their thickening power.

Gluten Free Cauliflower Crust grilled cheese
This also makes an amazing pizza Crust, low carb and flour free.
3 small Heads Cauliflower, stems removed. All sprouts had tonight was small ones. I mean like barbie sized cauliflower and all flower
. Cheddar Cheese Flax Meal Salt, pepper, Italian seasoning, garlic
Cut the florets away from the stalk and save it aside for whatever else you may want to do with it. You'll not need it for this recipe, but don't waste. Wash the florets in the strainer and throw them in the food processor. Rice em. Chop them up in the processor until they resemble rice or chopped garlic, don't over process.
Once you've got your cauli riced, throw it in a big pot and cook it. Don't add water just let it cook in its own juices. This will also help get rid of some of the moisture later. Once its cooked grab a tea towel and place a handful in the middle of the towel. Wring the hell out of the cauliflower, you want to get rid of as much moisture as possible. This is also how you make hash browns. Once you've got your dry meal of cauli, mix in a couple tablespoons of flax meal, spices, and about a half cup of cheddar. The cheese and flax will act as binders. I know loads of people call for eggs but I would rather not use them. On a cookie sheet make a layer about 1/4 inch to a bit more thick. Cut into squares and place on another well olive oiled cookie sheet. Bake 450 degrees for ten minutes, then flip, bake another ten minutes. Once they're toasted and more pancake bread like. Make a Grilled cheese. Little butter in a pan, melt, throw a slice down and put grated cheese on the top, another cauli bread atop that. Quinoa veggie stuffed sweet baby bells.
You meet the nicest people when out and about.
This is one of my favourite things to make, its high in protein and about 20 times more potassium than a ton of bananas.
I grow my own sweet baby bells, they're slightly sweet an lack the acid of their larger kin.
This is the Vegan Gluten Free version, feel free to mix it up if you have your own types of broths or butters.
1 cup dry quinoa
2 cups water
2 tablespoons veggie broth (better than bouillon)
2 tablespoons smart balance vegan butter
tsp coarse sea salt
2 tsp coarse black pepper
2 lbs sweet baby bells
1 Roma tomato small dice
1 Zucchini small dice
1/4 eggplant small dice
1 tablespoon turmeric (brilliant for brain function and colour)
Marinara sauce ( recipe for fresh or homemade can come later)
Begin by cutting the tops off of the baby bells, remove seeds and cut around the stem. Set the meat around the stem aside.
place two cups of water, quinoa, add the broth, pepper, salt, turmeric, zucchini, eggplant, tomato, bring it to a boil then cover and reduce heat to low.
Place the peppers on a pan and roast them for about five minutes at 425.
Remove from the oven and allow them to cool to touch.
Spoon the now soft quinoa/ veggie mixture into the peppers
place the marinara in a shallow pan or roaster
stand the peppers up in the marinara and bake again for about 7 minutes.
The short bake time allows the peppers and sauce to get warm but not dry out the quinoa on the top.
Serve and enjoy.
Great as a snack or a small meal.

Gordon Ramsay’s Hot Chocolate
Serves 4
8 tablespoons (100 g) unsalted butter, plus extra to grease
4 teaspoons unsweetened cocoa, to dust
4 ounces (100 g) good-quality bittersweet chocolate (minimum 70% cocoa solids), in pieces
2/3 cup (120 g) superfine granulated sugar
2/3 cup (120 g) all-purpose flour
Heat oven to 325° F. Grease 4 large ramekins with butter, about 3 inches (7.5 cm) in diameter. Cut a small, square piece of parchment and place in the bottom of the ramekin and grease with butter, then dust liberally with cocoa.In a small bowl set over a saucepan of hot water, slowly melt the chocolate and butter. Remove bowl from heat and stir until smooth. Let cool for 10 minutes.Using an electric whisk, whisk the whole eggs, egg yolks, and sugar together until pale and thick. Add the cooled chocolate mixture and whisk just to combine.Sift the flour over the mixture and using a large metal spoon gently fold in.Divide the batter between the ramekins and bake for 12 minutes.Turn the chocolate fondants out onto warmed plates and serve immediately.

Zucchini Bread for Mir.
Hello there, so you're looking for some sort of recipe for Zucchini Bread eh.
I do hope its healthy. Mine would generally be gluten free but this one I'm going to do whole wheat or non bleached. I really fancy organic flours.

3 c flour, organic whatever you can find. I know your markets differ.
pinch salt, I like Salish or the Himalayan
big pinch cinnamon, don't be shy its good for sugar levels and metabolism
big pinch of nutmeg
.5 cup of sugar of your choice or mashed nanas
.5 cup apple sauce, so if your da has an apple tree go press or food process some apples and voila you've got apple sauce.
lemon zest and juice
couple eggs or omit, you can add a banana if you like
2 cup grated zucchini
nuts or no nuts, i like using cran or other bits
1tsp soda and 1tsp bake powder
Mix dry and wet separately then Combine
Heat oven to 350 25-30 or until it looks done.

French Macaroons for Miranda
Ingredients
6 egg whites room temp
.5 cup castor sugar, you know the white C&H stuff
3 1/3 pow sugar , its so fluffy I want to live in a cloud of powdered sugar.
2 cups finely ground almonds (almond meal is easy too)
Place the egg whites in a bowl and mix until frothy. You can use a stand or hand mixer too this is much easier.
Beat in the castor sugar until it forms nice peaks.
Sift the powdered sugar and almond meal in another bowl
Quickly fold it into the the egg and sugar mixture until properly mixed, (don't over mix though) sing the abc's slowly and it should be mixed properly.
Here's the fun part
Put a few spoon fulls of batter in a piping bag and see if your batter is ready
Pipe a wee bit on a baking sheet about an inch to an inch and half across . If this bit of batter holds a peak, return all of it to the bowl and mix some more.
You want the batter to flatten immediately. If the batter looks like meringue you need a bit more folding.
If the batter is ready, return it to the piping bag with a round attachment and pipe little rounds evenly spaced on your baking sheet
IMPORTANT
Leave those piped rounds out for an hour or two, let them form a hard skin
Preheat your oven to 290
bake them until they are just set not darkened Brown=bad 8-10 minutes really depends on the oven
For coloured macaroons add a few drops of natural food colouring to your egg mixture

Fresh Apricots
Natasha Just asked for a few recipes so here goes
No sugar Jam
2lbs of apricots (adjust as needed)
Couple tablespoons of lemon or lime juice
no sugar fruit pectin
quarter cup of your favourite juice
three quarter cup water
Put the cut apricots, juices, lemon , pectin, and water in a pot bring to a boil, stir frequently to let the apricots break down.
Simmer until the consistency you fancy is present. place into jars, tubs or whatever, cool and put in the fridge.
You have jam yummo.
For a bit more fun try adding separately to the jam during the boil

currents
ginger
other fruits
